Here we're serving our vegan scrambled egg in a crusty roll with juicy tomatoes and fresh chives. A simple but unbelievable delicious meal that's the perfect addition to your breakfast or brunch offering.
- 500g Easy Mix Egg
- 20 beef tomatoes
- 20tbsp chives, chopped
- 20 bread rolls
- Oil for the egg
- Salt and pepper
- Wash, de-seed and dice the tomatoes.
- Wash and chop the chives finely.
- Heat up a pan with oil.
- Mix up the egg according to the instructions, mix with the tomatoes and add to the pan.
- Prepare as scrambled egg according to the instructions. Add salt and pepper to taste.
- Fill the rolls with the scrambled egg and top with chives. Enjoy!
