Vegan Mediterranean meatball sandwich

How does a Mediterranean meatball baguette sound? This delicious lunch recipe combines our Easy Mix Meatballs with fresh salad, olive, sun-dried tomatoes, capers and Italian herbs. 


Makes approx. 20 portions  
  • 1kg bag Easy Mix Meatballs 
  • 20 bread rolls
  • 40 sun-dried tomatoes
  • approx. 100 green and black olives
  • 20 handfuls mixed salad leaves
  • approx. 100 cherry tomatoes
  • approx. 60 capers
  • Mixed Italian herbs
  • Olive oil for garnishing
  • 5 bunches fresh basil

      • Mix up the meatballs according to the instructions and chill. 
      • While waiting for the mix, wash the salad leaves, tomatoes and basil.
      • Cut the sun-dried tomatoes into strips.
      • Chop around half of the olives into rings.
      • Once chilled, form patties with the meatball mix and fry until crispy. 
      • Fill the rolls with the salad, sun-dried tomatoes, olives, olive oil and herbs before adding the patties. 
      • Garnish with the capers, cherry tomatoes and the rest of the olives and serve with a drizzle of olive oil.
