How does a Mediterranean meatball baguette sound? This delicious lunch recipe combines our Easy Mix Meatballs with fresh salad, olive, sun-dried tomatoes, capers and Italian herbs.
Ingredients
Makes approx. 20 portions
- 1kg bag Easy Mix Meatballs
- 20 bread rolls
- 40 sun-dried tomatoes
- approx. 100 green and black olives
- 20 handfuls mixed salad leaves
- approx. 100 cherry tomatoes
- approx. 60 capers
- Mixed Italian herbs
- Olive oil for garnishing
- 5 bunches fresh basil
Preparation
- Mix up the meatballs according to the instructions and chill.
- While waiting for the mix, wash the salad leaves, tomatoes and basil.
- Cut the sun-dried tomatoes into strips.
- Chop around half of the olives into rings.
- Once chilled, form patties with the meatball mix and fry until crispy.
- Fill the rolls with the salad, sun-dried tomatoes, olives, olive oil and herbs before adding the patties.
- Garnish with the capers, cherry tomatoes and the rest of the olives and serve with a drizzle of olive oil.
