Our Easy Mix Mince is incredibly versatile and can be adapted to suit a whole range of recipes. Why not try using it to make a delicious vegan meatloaf served with potatoes and salad?
Ingredients
Makes approx. 5 meatloaves
- 1kg bag Easy Mix Mince
- 20 gherkins
- 7 onions
- 5 bunches parsley, chopped
- 150g vegan butter
- Seasonings: Salt, pepper, paprika, garlic powder
For the sauce:
- 1500ml vegetable stock
- 1300ml oat cream
- 20tbsp vegan crème fraîche
Preparation
- Mix up the Easy Mix Mince according to the instructions and chill.
- Peel and dice the onions. Chop the gherkins into small pieces.
- Once the mince mix has chilled for 30 minutes, sweat the onions in a pan with some oil until translucent. Add the parsley. Remove from heat and add into the chilled mince mix along with the gherkins. Mix everything together well.
- Form the mix into a loaf shape.
- Grease a baking dish and add the meatloaf. Brush with melted butter.
- Bake for 35 minutes at 200º top/bottom heating. Reapply a coating of butter every 10 minutes.
- While the meatloaf cooks, prepare the sauce. Heat up the vegetable stock before adding the cream. Finish with the crème fraîche.
- Once the meatloaf is cooked, pour over the sauce and bake for a further 10-15 minutes.
- Enjoy with potatoes and salad, or any other sides of your choosing.
